For most first-time visitors, around 3 nights in Ho Chi Minh City is a good starting point, then use the remaining time to explore another part of Vietnam before returning to the city for the flight to Siem Reap.

I would plan around 3 nights. That gives enough time for the central sights, the War Remnants Museum, markets, food and an evening in the city without rushing. If you want to include a Cu Chi Tunnels excursion or a full Mekong Delta day trip, 4 nights is more comfortable.
